| Abstract: | งานวิจัยนี้ได้ทำการศึกษาการไมเกรทของภาชนะสแตนเลสที่ใช้สัมผัสอาหารสำหรับผู้ป่วยในโรงพยาบาล รวมถึงประเมินถึงความเสี่ยงของการได้รับปริมาณโลหะจากภาชนะประเภทนี้ โดยได้ ทำการศึกษาภาชนะสแตนเลสสำหรับใส่อาหารจากโรงพยาบาลในกรุงเทพมหานคร จำนวน 4 โรงพยาบาล ได้แก่ โรงพยาบาลรามาธิบดี โรงพยาบาลตากสิน โรงพยาบาลราษฎร์บูรณะ และ โรงพยาบาลสุขสวัสดิ์ รวมถึงภาชนะที่ยังไม่ผ่านการใช้งาน พบการไมเกรทของสารจากภาชนะสแตนเลสสำหรับใส่อาหารจากโรงพยาบาลโดยวิธีโดยรวมที่ทำการทดสอบที่อุณหภูมิ 25 และ 70 C มี ค่าเฉลี่ยเท่ากับ 0.0532 ± 0.0196 แล 0.0949 ± 0.0131 mg/cm2 ตามลำดับ ส่วนการไมเกรทโดย วิธีเฉพาะเจาะจงของสารประกอบกลุ่มโลหะ ได้แก่ เหล็ก (Fe) นิกเกิล (Ni) และ โครเมียม (Cr) ด้วย เทคนิค Graphite Furnace Atomic Absorption Spectrophotometry พบว่าการไมเกรทของธาตุ เหล็ก นิลเกิล และโครเมียมจากภาชนะแตนเลสสำหรับใส่อาหารจากโรงพยาบาลที่ทำการทดสอบที่ อุณหภูมิ 25 C มีค่าเฉลี่ย 4.2704 ± 0.3662, 2.0649 ± 3.0914 และ 0.0065 ± 0.0153 mg/cm2 ตามลำดับและที่อุณหภู มิ 70 C มีค่าเฉลี่ยเท่ากับ 3.9714 ± 0.6777, 1.8815 ± 1.9336 และ 0.0038 ± 0.0018 mg/cm2 ตามลาดับ ขณะที่ภาชนะสแตนเลสที่ยังไม่ผ่านการใช้งานนั้นมีปริมาณ การไมเกรทของธาตุทั้งหมดในปริมาณที่น้อยกว่าอย่างมีนัยสาคัญ (p<0.05) แต่อย่างไรก็ตามเมี่อทำ การประเมินค่าการได้รับโลหะในอาหารเทียบกับค่าความปลอดภัยพบว่าไม่เกินเกณฑ์ ปริมาณที่ แนะนำ โดย European Food Safety Authority ( EFSA) และ The Joint FAO/WHO Expert Committee on Food Additives (JECFA)" This research is for study metal migration from stainless steel container which is used for the patient food in the hospital. This evaluation included the risk of steel quantity from stainless steel container by study these stainless-steel containers from 4 hospitals in Bangkok such as Ramathibodi Hospital, Taksin Hospital, Rajburana Hospital and Suksawat Hospital. This already including stainless steel container which is unused before also. We found overall the result of migration stainless steel container by experimentation at 25 and 70 Degree with average 0.0532 ± 0.0196 and 0.0949 ± 0.0131 mg/cm2. For migration by specific the material element made from steel such as Steel (Fe) Nickel (Ni) and chromium (Cr) with method Graphite Furnace Atomic Absorption Spectrophotometry. We found the result of experimentation the migration of element from steel, nickel, and Chromium at 25- degree condition it has average 4.2704 ± 0.3662, 2.0649 ± 3.0914 and 0.0065 ± 0.0153 µg/cm2. And at 70 degree it has average 3.9714 ± 0.6777, 1.8815 ± 1.9336 and 0.0038 ± 0.0018 µg/cm2 but for unused stainless-steel container, The quantity of element the migration in total was less than significant (p<0.05). However, the result of this research, based on the standard of European Food Safety Authority, (EFSA) and the joint FAO/WHO expert Committee on Food Additives, (JECFA) the quantity of steel element in Food is safety enough. |
